Kids sad after unable to return de-labeled beer bottles…

At least I hope they effin’ cried a little bit.  The little bastards have already stolen my floor jack, a bottle of jameson, used countless bottles of my laundry detergent, smokes out of my car, broke into the neighbors house, stole all the change out of all of our cars…they’re ruthless!  We’re talking kids that we observed playing “siphoning gas” with bigwheels.  A ten and six year old should be playing hide and seek not pretending to siphon gas out of a big wheel while one keeps watch and yells “hurry up, someone’s coming!”  It’s not really their fault tho and I shouldn’t give all the credit to the kids.   The parents and “adults” living there do their share of stealing our stuff too…

…and none of that really upset me…I’m not really an angry person… It takes quite a bit to get me riled up nowadays…

BUT I’M PISSED!

It probably has something to do with my efforts to quit smoking.  I’ve only bought two packs in the last two weeks or so and I was a pack a day smoker so I feel like I’ve done pretty good.

An ex girlfriend, the one that was the inspiration for my FML cyser, and one of my roommate’s best friends, stopped over a few days ago and we had ourselves a little three day bender full of drinking rum, whiskey, and lots and lots of homebrew.  So much homebrew, that the bottles would no longer fit on the counter and leave enough space to make even a sandwich.  The light rye was a hit, the browns were going down, my possibly peculiar was palatable enough for a few bottles to be quaffed.  I found a stash of edwort’s pale and yooper’s pale that a good friend of mine made.  They all quickly found a home in our bellies.  All in all, we had a really good time.

I placed the bottles in the hallway leading to the basement that I share with a family of ten living in a two bedroom apartment.  Yes 10 people in a two bedroom…above us…with hardwood floors.  A mom with eight kids, and their uncle.  None of them are employed and they steal whatever they can get their hands on, mostly bikes and clothes, but anything they can use or make a dollar from.  I didn’t figure they would be ridiculous enough to steal de-labled beer bottles, but they did.  I really have no idea how many, a couple cases maybe, but it was enough to make me so angry I was shaking.  I walked in my boxers outside to confront them about it and they just blamed it all on the kids.  I lashed back with some remarks about watching them, disciplining them, taking care of them…ya know, being parents.  The concept kinda went over their head.  I’m really curious what the redemption people told them tho when they brought tons of unlabeled bottles…and what they did with them? Gaaaaahd!

I wish the kids the best, it’s not their fault really.  Its a clashing of two cultures.  I used to live in a neighborhood that was like this.   If you didnt lock it down or tie it down, it wasnt going to be there when you got home.  Thats why I moved here, to a place where I leave my keys in my ignition, never lock my door, and never am concerned about the security of my personal belongings.  Don’t take any of this the wrong way, please.  I’m all for cultural diversity so long as there is consideration, thought, and logic in their practices.  This group of people seemingly has none of the above. The landlord says the eviction notice has been served and hopefully they’ll be out very soon.  My little brother is moving in, my roommate is moving upstairs to their place, and I can’t wait to clean the basement up (thats another story all together) and start storing carboys and beer down there.  My closet is full of full bottles and its too warm to ferment up here.

I’m calm now… after writing this and sampling one of my rye pale’s :)  Probably the sedative nature of the hops and not so much the venting on a blog that no one reads!  I’m just pissed that I finally had enough bottles that my drinking homebrew was pretty much keeping up with my brewing homebrew and now I have to de-label more bottles.  It seems like a silly reason to be upset now, but I promised my lower back we would do no more bulk bottle de-labeling!  My lower back hates de-labeling bottles…and now I’m a liar!

Fun with beer labels…

I made labels for my cyser and my winter ale.  I enjoy playing with photo editing software and it was fun to create these.  I would have posted them with the recipes/write-ups but those arent going to happen.  I look forward to making some more for future batches.

Ray’s Rye Pale

I’ve really dug the last few rye beers I’ve had, especially Founder’s Red Rye.  I’ve since decided I’m going to really explore rye in my beers and it is my goal to develop three bread and butter or house rye recipes – A pale/ipa with rye, a red ale brewed with rye, and a stout using a good portion of chocolate rye.
Last night, I started on the rye pale using the grain bill suggested for a recipe out of byo as a starting point.  Wanting to emphasize the spiciness of the rye, I went with chinook and columbus hops.  I haven’t decided what i’m going to dry hop it with yet but I’m really digging the aroma coming out of the fermenter right now.

**** update ****
Just bottled this bad mama this evening.  WOW.  very very very very tasty.  This beer smells so good i wanna take a bath in it!  seriously, while cleaning out the carboy i wanted to jump in the tub with all the hop trub.  I ended up going with an ounce of amarillo and an ounce of columbus for dry hopping.  it was dry hopped for a little more than 2 weeks.  the flavor and aroma are just fantastic.  best pale i’ve made. i’ll probably add a teeny bit more rye (maybe a half pound?) next time around, hell maybe another pound and a half just to play around with it.  it tastes so balanced right now.  i say its a pale tho it may be more of an IPA. estimated ibus are 46.1 from beersmith and the limit for a pale is 45.  its 5.9 estimated SRM as far as color goes, and an IPA needs 6.0.  I doubt i got good enough hop utilization to hit that target, so its probably under 45 but greater than 40 (guideline minimum for an IPA) and i bet my boil brought that SRM up to at least six….ok its decided, i’m adding more rye to bump up the color and if submitted in a contest i would submit it under an IPA. either way you shake it, this is one tasty treat.  heres an updated brewsheet, i’ll only post the final one in the future.

No More “Trying To Catch Up”

Recently, a friend of mine who had always been interested in brewing beer, began brewing beer. I offered what knowledge I had about extract brewing & partial mashes and his hobby took off like a wildfire. After two or three batches he had already built an all-grain cooler out of a 5 gal igloo cooler.

So whats the point? The point is that I am making excuses. Long story short, we’ve been brewing so much beer lately that it is impossible to think that I could “catch up” this blog to include all my previous beers and make everyone a story in its own right like I thought I originally could/would. It might get there at some point in time, but right now we’re simply just brewing too much. I think, between the two of us, we have cranked out over 60 gallons of beer in the last 6 months.

For the time being, I’m probably going to use this blog like a notebook. Just posting the recipes as they are brewed, starting with my rye pale ale from last night.

Couldn’t wait any longer on the cyser.

Due to initial taste testing and enjoyment during bottling coupled with the lack of other sources of booze in my house, I broke down and threw a bottle of cyser in the snow to chill and enjoy this evening before bottle conditioning and aging was complete. I am currently doing just that.

I did not use any clarifying agents and it seems pretty dang clear to me, however I did acclimate some ec1118 to the must along with the priming sugar before priming/bottling.  In hindsight, the still product tasted sooooooo good, that I’m wishing now that I would have left half of it unprimed.  This bottle, only 2 days old, is already showing slight carbonation, as you can see in the picture i think.  Initial thoughts are that it seems a little yeasty (probably from the addition of ec1118) but i’m thinking that will go away as bottle conditioning is finished and the cyser ages.  It should hopefully be replaced by a tart acidity that will compliment the dryness of this beverage…  Either way i’m nothing but enthused about this brew.  Initial brew on the 22nd of november makes this bottle only about 2 and a half months old, 2 days out of the secondary.  I’ll try another  in 2 weeks…or maybe 2 hours…

Whats in your closet?

I called in sick to work yesterday…and I still didn’t do the write up for the cyser or for the winter ale!!!  Maybe tonight.  I make no promises though as I’m still feeling a bit under the weather.  In my defense I did take back all the recyclables and then washed out, scrubed, and de-label sixty more bottles.  Now I have enough for these two batches plus two more.

I stuck my nose over the carboy of the cyser.   I cannot wait to try this when I bottle, tentatively on Sunday.  I did not think two nutmegs would do anything, but I definitely smell the spice.  The winter ale smells absolutely fabulous as well.  I can’t remember when I’ve ever been more excited about my beer and more excited to brew more.  I need to free up some carboys or check with all those people I gave carboys to to get started brewing and see if they are still using them.  My hobby is turning into an addiction, and with my tax refund coming soon, I can’t wait to upgrade some equipment!

Procrastination is my name. Organization is not my game.

When I first started this little blog up, I thought it would be an easy way to keep notes on my beer and record random thoughts and events that happened to me or that I was influenced by on brew day…What music I listened to, what the weather was like, what was pissing me off, what was making me happy, who helped brew, etc.   A little photo album for each day or whatever.  And it is.  It’s a great idea and I need to keep this stuff written down as my memory doesn’t serve me very well as of late and I like remembering brew days.  I don’t really own any notebooks, I lose any pen I get my hands on, and my organization skills are sub-par to say the least.  But AHA!  I use the internet daily.  This should be easy for me to do!!!  Yet despite all of my excitement and good intentions, BLOG FAIL.   Don’t get me wrong.  I haven’t given up.  I’ve just proven to myself once again that one of my weaknesses is procrastination and I need to work on that.

I’m sick today.  Just a bad cold.  It’s my fault.  The last couple weeks I’ve had the winter itch.  SAD is what they call it I guess.  I never thought I was affected by this “condition” but the dark snowy days have finally gave way to a need for increased social contact and I’ve been attempting to embrace that need.  My boss calls it burning the candle at both ends.  It’s not healthy and I know this.  I’ve been working all day, and partying through the night…I saw it coming and it’s my fault I’m sick.  I’ve just had too many nights stuck inside with the dog and the cat.

I need a bonfire! A huge one!  A night under the stars with a bright moon to keep everyone’s bare or sandaled toes un-stubbed should they stray away from the light of the fire.   Not a full moon tho, only half lit up with  a slight crescent shape like a seductive wink of the eye in the night sky.  That’s how I like my moon.   A shirt optional drum circle, maybe with some warpaint for those of us up after 3 am and most definitely some scantily clad women dancing around, one that’s not too good on the tambourine but ain’t afraid to shake it.  That’s what I need.  A night of the wild, abandoning all inhibitions.  An evening barking at the moon.  There needs to be beer there too, oh yes, plenty of beer…but really it’s a night for whiskey…yea…thats what I need right now…whiskey and women, fire and the moon.  Nature…but not this cold shit!

Bah! What am I talking about?  I need some dayquil, a cup of tea, and a nap!

The reason for this post and rant is to once again try to light a bonfire under my ass and get me to update this with my brew notes, and in the future, write more concise accounts of the brew day. I’m sitting here staring at my last two brew “notes” and I need to get them down before I can no longer understand my own chicken scratch.  Hell the last notes are written on the cardboard backing of an aqua-mist air stone package. (I use the airstones to infuse oxygen into the wort).

So long story short, I got my torrified wheat!  I’ve brewed a cyser and a winter ale and should I call into work sick today, it is my goal to have both of those written up before bedtime.

Still no torrified wheat…

The brewing supply company I’ve been using for years and years and years biffed on my order twice, so I’m still waiting on that torrified wheat for my upcoming winter warmer. The first package had torrified barley instead of torrified wheat. I felt bad asking them to pay shipping for an item that was $.97 plus I needed another yeast strain for my cyser so I ordered that along with the replacement torrified wheat and asked them to only eat the shipping costs and I would pay for the yeast. They were apologetic and shipped me the wheat and yeast with no shipping costs. The package finally came 2 days ago and there was a nice white labs cider yeast vial and no torrified wheat. I slept on it for a day, cause I was pretty peeved, then wrote them a nice email and spoke with a gentleman named Pete who refunded me pretty much everything on my order, sent me out the torrified wheat, and a few ounces of free hops. He says its a new slovenian variety sample from one of their suppliers? Anyway, free hops. woo hoo! I’m weird about getting things for free…kinda makes me feel bad but this time i’m gonna have to let it go and have a homebrew.  If things go right, I’ll have my cyser in the fermenter by this time next week. Two more for the winter warmer. Then we’ll have to come up with an ale for petes hops and some other randoms i’ve got sitting in my freezer. HOORAY BEER! I’m excited
